Spicy Meatballs
Taken from FHM. Good for quick bites.
300grams ground beef
Handful fresh mint
Handful fresh parsley
1 onion
Garlic
1 Egg
Breadcrumbs
Paprika
Crushes red chili flakes
Cinnamon
Salt and pepper
Dice union, saute lightly without colour. Remove from heat and allow to cool. Finely
chop mint and parsley. Mix all ingredients together. Lightly form walnut size balls.
Dont compact balls heavily while forming. The meat will stay light and tender. Place onto
oven pan and hold until ready to cook.
Broil in oven for 10 minutes.
Roased Potatoes
Taken from FHM too, same issue.
Organic red potatoes

Japanese Mayo
Salt and pepper
Cut potatoes into manageable sizes. Place onto over pan, drizzle olive oil add plenty of
salt and pepper. Cut top off garlic bulb. Add a small amount of olive oil and wrap in tin
foil. Roast for 50 minutes at 200 degrees.
When the roasted garlin comes out of the oven, the texture will be smooth and creamy.
Squeeze bulb into bowl with mayo mix together and spoon over the top of hot roasted
potatoes. The creamy mix will melt straight into the potatoes.
Braised Spare Ribs with Coffee
Taken from Pop Club. My favourite dish.
Ingregients
A : 1kg spare ribs (chopped into 3" long sections)
2 tsps baking soda, 150ml water
B : 4 tsps instant coffee powder (mixed with 150ml hot water)
C : 1/2 tbsp chopped garlic
Marinade
2 tbsps oyster sauce
1 tbsp light soy sauce
1 tbsp sesame oil
1 tbsp shaoxing wine
1 tsp sugar
1 tbsp custard powder
1 tbsp tapioca flour
Seasoning
2 tbsps plum paste
2 tbsps chilli paste
1 tbsp sdark soy sauce
1 tbsp sugar
Method
1. Mix ingredients (A) well and leave it for 1 1/2 hours. Rinse and drain
2. Mix spare ribs with marinade and leave it for 45 minutes. Deep fry spare ribs
till golden brown and cooked. Set aside.
3. Heat 3 tbsps of oil. Add chopped garlic and stir fry till fragrant.
Add ingredients (B) and seasoning.
4. Bring to the boil and add the fried spare ribs. Mix well. Serve.
